Portobella Mushroom and Black Pepper Pork Loin

It doesn't get much easier than this one!

My husband found this delicious dinner during one of our Saturdays at Samples (aka Sam's Club). It's moist, tender and soooo flavorful! I've made it several times and it has been a family favorite each time. Just remember to take it out of the freezer the night before you want to use it. I simply follow the cooking instructions on the back of packaging.

Preheat oven to 350.
Remove pork from packaging and wrap in foil. Place in an oven safe dish. Bake for 25-30 min/per pound. (I lean more towards the 25 min/lb. You can always add some time, but you don't want pork to be dry!) Remove the foil and bake an additional 5 minutes to brown. Let pork rest for 5 minutes before slicing, allowing juices to redistribute.

Outback Steakhouse Sauteed Mushrooms

Outback Steakhouse Sauteed Mushrooms photo

Outback Steakhouse is one of our favorite restaurants. We always order an extra side along with our steak, their sauteed mushrooms. If you love mushrooms, this recipe is a must try!

1 (10 1/2 oz) can beef broth
1/2 cup onions, diced
2 16 oz. cans small whole button mushrooms (plus the juice of one jar)
1/3 cup Brandy or Burgundy wine

Place beef broth in a soucepan and simmer onion for 15 minutes. Add mushrooms, juice from 1 jar & Brany or wine. Simmer 15 minutes. Serve with steak.

Brooke's Key Lime Pie

This recipe comes from a good friend. It's so easy and one of the best key lime pies I've ever tasted!

Brooke's Key Lime Pie photo
9 oz. graham cracker crust*
2 cans sweetened condensed milk
6 egg yolks
1/2 cup fresh lime juice
Can of whip cream

Preheat oven to 300 degrees. Blend the milk, yolks and juice together. Bake for 15 minutes. Allow to cool. I prefer chill in the refrigerator before serving. Top with whip cream.

*Make sure it's the 9 oz crust. Anything smaller will not accommodate all the filling.
Variation: Instead of using the 9oz graham cracker crust, you can use 10 individual crusts for a more personal touch to a dinner party. They can be found in the baking aisle of your local grocery store.
