Portobella Mushroom and Black Pepper Pork Loin

It doesn't get much easier than this one!

My husband found this delicious dinner during one of our Saturdays at Samples (aka Sam's Club). It's moist, tender and soooo flavorful! I've made it several times and it has been a family favorite each time. Just remember to take it out of the freezer the night before you want to use it. I simply follow the cooking instructions on the back of packaging.

Preheat oven to 350.
Remove pork from packaging and wrap in foil. Place in an oven safe dish. Bake for 25-30 min/per pound. (I lean more towards the 25 min/lb. You can always add some time, but you don't want pork to be dry!) Remove the foil and bake an additional 5 minutes to brown. Let pork rest for 5 minutes before slicing, allowing juices to redistribute.
